Coconut Yogurt

I love my Instant Pot!! One of my favorite things to make in it is coconut yogurt! I use The recipe from Against All Grain

All you have to do is press the yogurt button!!

When it first comes out it is separated I just used a whisk in each container to blend it up before putting it in the fridge. 

The next morning it is creamy and absolutely delicious!!! 

With fresh mango! My favorite breakfast.

This little bottle has been sitting on a shelf by my desk for a couple of years! I made it at one of the first Make & Take classes I hosted for Young Living, since then apparently I haven't sat out in the sun long enough to need it or remember it. 1st Grade Down!

                                                        With 2 of his amazing teachers!  Today was Ethan's last day of first grade! This was his first year fully in a general education setting and he rocked it out! I am so proud of him and how far he has come. We still have a ways to go but I know that he will get there.
